Oven Baked Sweet Potato Fries

2 1/2 pounds sweet potatoes or yams

1 Tbs coconut oil

1 Tbs brown sugar (optional)

1 tsp Celtic sea salt

1 pinch ground cayenne pepper (optional)

1 pinch kelp powder (optional)

Preheat oven to 450 degrees F (230 degrees C).

Coat a baking sheet with a natural non-stick vegetable cooking spray.

Scrub potatoes well and cut into; 1/2 inch thick strips.

In a large mixing bowl toss potatoes with oil, sugar, salt and red pepper and kelp.

Spread evenly on baking sheet in one layer.

Bake for 30 to 45 minutes.

Serve immediately.
