2 large sweet potatoes or yams
1 large sweet red onion
6 to 10 Champion mushrooms
1 small jalapeno (optional)
2 tbsp. grated parmesan or romano cheese

Dice the sweet potato, onions and mushrooms and toss with salt in a

Saute potatoes, onions, and mushrooms in the coconut oil Until the
onions are brown.
Sprinkle with grated cheese arid serve.
Serves 2 people as the main dish and 4 people as a side dish.
